Grilled peaches popping up on restaurant menus and on magazine covers have not enticed me . . . until this last weekend. I took a quick trip to Asheville, NC, which is a micro-mecca for foodies. The quaint downtown of this small and artsy city are loaded with restaurants serving wonderful food. I happened upon one specializing in pork dishes. The glazed pork chops served with grilled peaches were tantalizingly delicious, and they reminded me of a recipe for glazed, applewood smoked chops I'd created a while back. Of course I couldn’t wait to make my own dish upon returning home. My chops were served with fresh rather than grilled peaches, and I use much thinner chops to speed up the cooking time.
