The first thing I found when I opened the refrigerator door was last night's spaghetti and meatballs. So I washed a few mushrooms and gently pulled out their stems. (You should always keep some 'shrooms on hand! They enhance almost any food from veggies to meats and stews.) I chopped up a little bit of spaghetti and meatballs, stuffed the mushroom caps with the mixture, and sprinkled a little bit of Parmesan cheese on top. I placed them onto a cookie sheet coated with olive oil cooking spray, and popped them into an oven preheated to 400 degrees. 5 minutes later they were ready to serve as a delicious hors d'oeuvre or entree.
Make room for some stuffed 'shrooms in your diet today. It's as easy as opening your fridge!
